How to Make the Best Grilled Shrimp Tacos

If you love tacos but don’t always have the time to make them, these easy shrimp tacos are for you! Ready in just 30 minutes, they’re perfect for a quick weeknight meal. Plus, they’re so yummy that no one will even know they were easy to make!

I seem to write all my recipes when I’m hungry. I do the same thing when I grocery shop. How many of you grocery shop when you’re hungry? I bet I’m not alone. Ok. back to the yummy recipe.

Living in San Diego you can get the best Mexican food and tacos are one of my favorites…especially shrimp tacos.

Shrimp is one of the easiest proteins to cook. They take little time to cook and they are an easy go-to meal addition because you can keep them frozen.

For this recipe I used a bag of frozen raw shrimp from Trader Joes. If you don’t have a trader Joes your grocery store will have a bag.

How to make the yummiest easy shrimp tacos

Prep your shrimp

If you are using frozen shrimp be sure to thaw them first. Simply put them in a bowl and run them under cool water. Next, peel the shrimp and remove the tails and devein.
(NOTE: Don’t thaw your shrimp under hot water as it will cook the shrimp.)

Prepare your Ingredients

While the shrimp is thawing now would be a good time to prep the taco toppings.

Chop your veggies and get the condiments ready. (lettuce or cabbage, salsa, cheese, sour cream, etc.)

Cook Shrimp

Heat oil over medium-high heat. (I like olive or avocado oil).

Add your shrimp to a skillet. Season with salt and pepper.

Cook 2 minutes on one side then flip and cook an additional 2-3 minutes or until cooked through.

Warm Tortillas

To warm flour tortillas all at once, wrap them in foil and warm them in a 350F oven while you’re getting everything else ready. OR, heat in the microwave in a covered dish for about 1 minute. (NOTE: For Gluten Free options use corn tortillas or my favorite Siete Grain Free Tortillas, paleo-friendly tortillas)

Assemble Your Tacos 

Add whatever toppings float your boat!

I love the works!

I put a little bit of everything on my tacos.  

I start with a base of shredded lettuce or cabbage, add shrimp, cheese, diced tomatoes, avocado, salsa, and a dollop of sour cream or a dairy-free alternative. I use Culina Dairy Free yogurt. It’s fantastic and super clean.

The yummiest easy shrimp tacos are ready in about 30 minutes!

Wanna make it Michele’s way? I’m gluten free so I start with a corn tortilla. Then a drizzle some of the creamy sriracha greek yogurt sauce on the tortilla. Next, I start layering with lettuce, salsa, shrimp, sliced avocado, cilantro, and a squeeze of lime…and a dollop of sriracha. So yummy!!!!
